Eg. Saturday harvested, & collected ex-farm for a Sunday Dinner.

• Kitchen Visits? Perhaps, if it chances to fit our plans. Priority is on the harvest work.
  Harvest season is the equivalent of Friday prep & service, every day. Every single hour of good weather is critical to the weekly harvest process.
• Chef's are welcome to make an appointment to come and see the truffle grades.
• Trade sales appointments are available at Farm Gate, better early or late in the day.

Top grade truffle is best used 5-10 days, though typically good for at least twice as long if treated properly.
Cheaper grade truffle has a shorter shelf life and requires more per dish. {therefore it's generally not cheaper per dish}
These points are made as there is substantial difference between best and cheapest. Supermarket spices anyone?

Top grade or lower, the flavour of a truffle remains constant from time of harvest, with the lifespan of the aroma dependent on the initial quality.
Choice of most suitable grade also depends on the dish.

Purchasing direct from the orchard reduces handling delays (Eg. When last week's/weekend's truffle, is couriered to an interstate wholesaler Monday/Tuesday, then delivered to a restaurant mid-week for Fri/Sat meals... )

We believe there is no place in the production of a delicate, gourmet product for the use of either herbicide or pesticide sprays which are often used in the industry.
